Easy potato salad(chat joldi aalu)

What you need:

  • 1/2 kg potato washed, boiled and skinned
  • 1 carrot, grated
  • 1 big onion, thinly chopped
  • 1 big tomato.
How to do it:

Heat a frying pan at medium temperature and add 1 tbsp of cooking oil (you can use butter as well). When the oil is hot, reduce the temperature and add the onions. Fry it until it is a nice golden colour and it smells ice. Add the tomato and carrot after the colour of the onions change (the colour is like saffron). Thoroughly mix now. Then add the boiled, but slightly mashed potatoes. Add salt and freshly ground black pepper. Garnish with a handful of fresh corriander leaves. If you like, you can also add 1/2 cup of green peas.
