Semolina with Vegetables


This quick and easy dish is great for breakfast – and it’s a great substitute for your normal breakfast.

Ingredients:

  • · 1 cup semolina
  • · ½ of a medium sized onion
  • · 1-2 green chillies, chopped
  • · 2 cloves of garlic, chopped
  • · 2 Tbsp oil
  • · 1 Tbsp butter
  • · 1 tsp mustard seed
  • · ½ cup peas
  • · 1 grated carrot
  • · 1 Tbsp roasted peanuts
  • · 1 Tbsp seedless raisin
  • · 1 tsp sugar
  • · 1 tsp lemon zest
  • · The juice of ½ a lemon
  • · +- 1 ½ cup water
  • · Salt to taste

Method:

  • · Use a heavy-bottom frying pan with your stove set at medium temperature.
  • · Pour the oil and butter into the pan.
  • · Add the mustard seeds when it is hot.
  • · Gradually add the onion, green chillie and garlic and fry for around 5 minutes until the mixture is light brown.
  • · Add the semolina and fry until the colour becomes brownish and there is a nice aroma.
  • · Add the peas and grated carrot. Mix this and add the water.
  • · Add the remaining ingredients: peanuts, raisins, sugar and lemon zest.
  • · Stir further until it is dry.
  • · Turn your stove off, add the lemon juice and cover for around 5 minutes.
  • · Garnish with green herbs (dhania, mint, parsley etc) when serving hot. You can also serve with sweet and sour chutney.
