Dragon Pasta


What you need:
  • 1 packet spaghetti, boil it according to the label.
  • 2 tbsp olive oil
  • 1 big onion
  • 4 medium tomatoes
  • 1 tbsp garlic paste
  • 1cup fresh basil and dhania
  • ½ cup boiled green beans
  • 1 red paprika
  • 2 small green chillies.

Method:
  • A heavy-bottom fry pan is good.
  • Set your stove to a medium temperature and 1 tsp 5phoron to the pan.
  • When you get a nice smell, add the chopped onions and fry until golden.
  • Add the chopped tomatoes and fry until they are mushy.
  • Add the salt, sugar and remaining things.
  • When a nice smell fills your whole home (and you are hungry), add the spaghetti to the mixture.
  • Mix properly and add 1/2 cup grated cheddar cheese on top

Now your food is ready eat

Easy-Peasy Chicken Roast with Veg


Ingredients:
  • 1kg whole chicken, washed. (I remove the skin)
  • 2 Tbsp of
  • Ginger
  • Garlic
  • Green chillies
  • Curry leaves
  • Fresh dhania
  • Olive oil
  • Salt and black pepper
  • Stuffing for the chicken (I have tried several before)

Method:
  • Create a paste with the ginger, garlic, green chillies, curry leaves, fresh dhania and the olive oil.
  • Rub this nicely into the chicken
  • Keep the chicken aside for an hour to allow the flavours to sink in
  • Place the chicken in the centre of a greased tray
  • Stuff it with lemon juice, garlic fresh herbs . A whole orange also works well. Vegetables are another option
  • Roast both sides of the chicken at 160°C for about 45 minutes.
  • Just before it is almost done, decorate the tray with steamed vegetables. The juices from the chicken will ensure that the vegetables are tasty.
  • I think this meal goes great with a green salad. Let me know what you ate it with!

Apple Bake



Ingredients:
  • 1 cup cake flour
  • 1/2 cup sugar
  • 1/2 cup oil
  • 2 large eggs
  • 2 tsp baking powder
  • 2 big green apples
  • 1/2 cup raisins
  • 1 tbsp cinnamon sugar
  • 100ml milk
  • Lemon juice
  • 1/2 cup chopped nuts

Method:
  • Whisk eggs and sugar until light in colour
  • Then add oil and whisk
  • Sift the dry ingredients into a mixture
  • Add milk until a batter is formed (be careful not to make it too runny or stiff)
  • Grease an oven-proof dish and pour a thin layer of the batter to cover the surface


  • Peel, core and thinly slice the apples. Arrange the apples and raisins on top of the layer of batter you just put into the pan.
  • Sprinkle cinnamon sugar and lemon juice

  • Cover with the remaining batter
  • Decorate with chopped nuts
  • Bake at 180°C for 20 minutes
  • Allow it to cool and serve with cream, custards or with cherries on top

Singara



Outer Layer / Pocket:

You need:
  • 1 cup self-rising flour
  • A pinch of bicarbonate of soda
  • Salt to taste
  • 4 Tbsp oil
  • 1/2 cup cold water
  • Mix all of these ingredients to form a soft  dough.



Filling:

You can use either a potato, mince or any other curry you fancy. I used a potato curry.

You need:
  • 1 big potato
  • 1 onion
  • 1 carrot
  • 1 tomato
  • 1 tsp curry powder
  • 1 or 2 green chillies
  • 1/2 tsp arnture (dry mango powder)
  • 1/2 tsp chilli powder
  • Fresh dhania leaves
  • Salt to taste
Method:
  • Boil the peeled potatoes and mash them
  • Fry onions until they are golden in colour
  • Add the tomato and grated carrot to the onions
  • When soft, add the mashed potatoes and remaining ingredients
  • Mix thoroughly and allow to cool


The Singara

  • Form pockets with the outer layer that you made. (Look at the step-by-step photos if you are confused)
  • Fill the pockets and deep fry
  • This is best enjoyed served hot with tomato sauce or tamarind sauce.




Pizza


The Base:

You need:
  • 1 cup brown bread flour
  • 2 tsp baking powder
  • 1/2 tsp cream of tartar
  • 1 tsp mixed herbs
  • 1/2 tsp black onion seeds
  • 3 tbsp cooking oil
  • 1 cup plain curd
  • 1/4 cup grated cheese
Mix all the dry ingredients properly. Add the oil, and then the curds and lastly the cheese. Make a soft dough which you must cover for 10 – 15 minutes.


Topping:

You need:
  • Tomato sauce
  • Your choice of vegetables (left-over roasted chicken works very nicely)
  • Top with cheddar cheese
  • Sprinkle with rosemary leaves
  • Bake at 180°C for 20-25 minutes


Grilled Macarel


  • Clean  the macarel, wash it and chop its head off .
  • Brush olive oil on both sides.
  • Sprinkle salt and turmeric powder.
  • Keep the fish aside for 30 minutes.
  • Wash and cut vegetables of your choice into small pieces and steam for 5 – 10 minutes.
  • Spray an oven-proof dish lightly with oil. Now slice the fish on both sides, using garic, peri-peri or any seasoning of your choice.
  • Decorate the dish with the steamed vegetables and cover with aluminium foil.
  • Grill at 100°C for 10 minutes.
  • Check  the fish by uncovering it. Turn it over and grill for another 5 minutes. 
Now you  ready to eat . Enjoy your creation. Remember that every day, you can learn something new – from young or old.

Garlic chicken with spring onion


  • Remove the skin from 1kg of chicken. Wash and cut it into small pieces
  • Rub 1 Tbsp of garlic paste into the chicken
  • Fry 1 big onion and tomato at medium temperature for 5 minutes each.
  • When the colour changes, add the chicken.
  • Stir well
  • When mixed properly, add 1tsp curry powder, 1/2 tsp turmeric powder,1 tsp garam masala, 1 tbsp corn flour, 1 tsp sugar and 1 tsp BBQ chicken masala.
  • Mix and stir thoroughly until you get a nice aroma.
  • Add half to a cup of water and cover.
  • Wash cut and dry a bunch of spring onions in a paper towel
  • When the chicken is cooked, add the spring onions and mix
  • Serve and enjoy with basmati rice. I hope you enjoy it
