Outer Layer / Pocket:
You need:
- 1 cup self-rising flour
- A pinch of bicarbonate of soda
- Salt to taste
- 4 Tbsp oil
- 1/2 cup cold water
- Mix all of these ingredients to form a soft dough.
Filling:
You can use either a potato, mince or any other curry you
fancy. I used a potato curry.
You need:
- 1 big potato
- 1 onion
- 1 carrot
- 1 tomato
- 1 tsp curry powder
- 1 or 2 green chillies
- 1/2 tsp arnture (dry mango powder)
- 1/2 tsp chilli powder
- Fresh dhania leaves
- Salt to taste
Method:
- Boil the peeled potatoes and mash them
- Fry onions until they are golden in colour
- Add the tomato and grated carrot to the onions
- When soft, add the mashed potatoes and remaining ingredients
- Mix thoroughly and allow to cool
The Singara
- Form pockets with the outer layer that you made. (Look at the step-by-step photos if you are confused)
- Fill the pockets and deep fry
- This is best enjoyed served hot with tomato sauce or tamarind sauce.
