Cinammon borra

"Borra" is a traditional Bengali dessert item. Yesterday, I want to the Mugg and Bean restaurant and was unimpressed by their "Cinammon balls." After observing how dry theirs was, I thought that I could surely do better and came up with this recipe. In my biased opinion, I think this recipe is what the chefs at Mugg and Bean should be following! 

My Cinammon "Borra" - better than Mugg and Bean


Ingredients: 

  • cup buttermilk  
  • large egg  
  • tbsp apricot jam  
  • 180g cake flour  
  • 1/2 tbsp salt  
  • tsp baking powder  
  • tbsp brown sugar  
  • tsp shomp (anniseed 
  • tbsp semolina  

Method: 

  • Mix all the ingredent throughly to make a nice liquid dough  
  • Heat the oil in a karai (frying pan) and drop a spoonful of the batter into the hot oil 
  • Fry both sides of the "borra" until brown

Ferrero Rocher Cake

So chocalatey! - With six Ferrero Rocher chocolates


You need: 

  • 2 cups cake flour. 
  • 1/2 cup nice cocoa powder. 
  • 4 eggs 
  • tbsp baking powder 
  • Pinch of salt 
  • 1 1/2 cup sugars  
  • 1/2 cup buttermilk  
  • tbsp apricot jam 
  • 180 ml cooking oil 
  • Lemon essence  
  • 6 Ferrero Rocher chocolates 

Method: 

  • 180'c 25 -30 min (every oven has its own mind) 
  • Whisk eggs, oil, buttermilk and apricot jam one after the other 
  • Mix all the dry ingredients thoroughly  
  • Add to the liquid mixture  
  • Mix properly but don't overmix 
  • Grease a square oven-proof tray and pour cake mixture evenly with a wooden spoon  
  • Sprinkle lemon essence  
  • Break the chocolate and spread it over the top of the cake  
  • Bake for 180'c for 25-30 min or until done

Grand Granadilla Cake

The Grand Granadilla Cake


You need :
  • 1/2 cup margarine
  • 1 cup sugar
  • 2 large eggs  
  • 1/2 cup buttermilk 
  • 115g Granadilla pulp 
  • 2 cups cake flour  
  • 3 tsp baking powder  
  • Pinch of salt 
  • 1 tsp mixed spice  
  • 20 ml sunflowers seeds  
Method:
  • In a mixing bowl, cream the margarine and sugar until it is smooth and light.
  • Then add the eggs one at a time, followed by the buttermilk. Remember to whisk all the time
  • Sift flour, salt and baking powder   
  • Mix together the dry and wet ingredients  
  • Add mixed spice and sunflower seeds  
  • Mix everything together nicely
  • Grease a round over-proof dish properly. Pour half of the mixture, and then half of the granadilla pulp. Thereafter, use a wooden spoon to cove the mixture with the remaining batter.  Then sprinkle the resultant mixture with the remaining granadilla pulp.
  • Bake at 180'C for 25-30 min or until done

Nandarani's Nice Nachos

First of all, do you know who Nandarani is? Let's just say that she is someone that I used to know ;-) 

Tasty and easy nachos!

Ingredients: 


  • 3 big boiled potatoes 
  • 1 tomato 
  • 1 carrot 
  • 125g corn chips 
  • 1/2 cup grated cheddar cheese 
  • tbsp olive oil 

Method (it is really quick and easy): 

  • Grease an oven-proof square tray  
  • Cut the boiled potatoes into circles, and place them on the tray so that they form the bottom layer 
  • Also cut the tomatoes into a round shapes, and finely grate the carrot 
  • Place the corn chips, tomato, carrot and cheese on top of the potato layer 
  • Finally, sprinkle with some cheese.   
  • Bake at 180° for 10-15 minutes 

Enjoy this vegetarian dish as a snack or light dinner!
