First of all, do you know who Nandarani is? Let's just say that she is someone that I used to know ;-)
Ingredients:
- 3 big boiled potatoes
- 1 tomato
- 1 carrot
- 125g corn chips
- 1/2 cup grated cheddar cheese
- 1 tbsp olive oil
Method (it is really quick and easy):
- Grease an oven-proof square tray
- Cut the boiled potatoes into circles, and place them on the tray so that they form the bottom layer
- Also cut the tomatoes into a round shapes, and finely grate the carrot
- Place the corn chips, tomato, carrot and cheese on top of the potato layer
- Finally, sprinkle with some cheese.
- Bake at 180° for 10-15 minutes
Enjoy this vegetarian dish as a snack or light dinner!
